During this past week, I’ve been baking a lot. (If you’re wondering why I’m baking, I mentioned in my previous post how I want to cook, clean, and basically be an ultimate housewife for Tyler – probably won’t happen but we can try.) The first night, I baked cookies but Tyler said they were a little too crispy for his liking. The second night, I baked more cookies but made them softer. Tyler said they were perfect. On the third night, I baked a lemon blueberry coffee cake.
My Baking Secrets
Tyler was pretty surprised when I baked the first set of cookies. I felt like I was on a roll when I baked on the second day, and I felt like an adult (a true adult) when I baked on the third day. Here’s my secret to baking…
I didn’t make the cookies from scratch.
Tyler has been coming home late from work, which meant I was able to get away with saying I baked them from scratch. I’m pretty sure Tyler already knows, but I bought the Pillsbury cookie dough. It’s super easy to bake. All you have to do is turn on the oven, put the cookie dough in, and leave it for 5-8 minutes depending on how soft you want the cookies to be. It’s that easy.
It was a spur of the moment when I decided to bake cookies. I saw the Pillsbury cookie dough when I was at the grocery store. It reminded me of my mom since she often used that brand growing up.
Baking Lemon Blueberry Coffee Cake
After 2 days of “baking” in a row, I couldn’t break my streak – I had to bake for the third night! I ran out of cookie dough and I couldn’t go back to the grocery store since Tyler was home early. Otherwise, he would have seen that I’ve been lying. It’s a small white lie, so I think we’re okay! He’s fed and no one is hurt (physically).
I stumbled across this lemon blueberry coffee cake when I was googling “easy dinner recipes”. I guess we can eat cake for dinner. There was a video of the baking process and it looked so easy. I tried out the recipe and everything was good, I followed the instructions to the T. However, for some reason, the baking time took a lot longer than what the recipe listed. The recipe called for 45 minutes of baking, but I baked it for one hour. I kept checking the cake by sticking the cooking thermometer into the center of it to ensure that the batter was fully baked.
At first, it made me super nervous. I wasn’t sure if I was doing this correctly, but it turned out so good! Tyler was a huge fan of the cake and it made me so happy. Now I understand why my stepmom gets so happy whenever I praise her cooking.
Moving forward, I’m going to compliment everyone on their cooking. I think that’ll make people happy.
On another note, I used our KitchenAid Mixer for the first time while baking the cake. Tyler’s parents got us the mixer back in May and it was sitting in our kitchen collecting dust. Oops. I’m glad I was able to put it to use! I can’t wait to bake and cook more using the KitchenAid Mixer. I hope Tyler has health insurance – I’m kidding, I’m sure he does, lol.
Besides the KitchenAid Mixer, I’m also excited about our air fryer! I ordered an air fryer from Amazon two nights ago and it’s supposed to come tomorrow. We’re slowly building our kitchen appliances collection and I couldn’t be any more excited! I think next on my list is an espresso machine, but I’m currently obsessed with Dalgona coffee. I don’t think I’ll be needing espresso anytime soon.
